Pinakbet Recipe
Here's my simple, yummy pinakbet recipe. This is a healthy meal combo with rice that every Filipino should love. I love it and hope, kids would love it. The taste is distinct, and the ingredients are native to the Philippines. Even the fermented shrimp is a signature to this dish. I love this to have a pureed style squash and personally I don't like the smell of string beans when somewhat under cooked. When adjusted to have a subtle fermented shrimp, it can even go without rice. But with strong "hipon", I'm pretty sure you should add an extra cup of rice, heh. I sometimes like this at lunch, kinda funny when you get food comma at 2PM. Especially on weekend and the weather is cooler and windy. Yay, this makes me hungry. Anyway, here's the recipe and hope you enjoy it.
Ingredients
- Okra, eggplant and string beans
- Half ampalaya (bitter gourd)
- About an eighth of a medium sized squash
- Hipon or bagoong (fermented shrimp)
- Garlic & onion
- Small portion of bell pepper, minced
- About 80 grams of pork will suffice
- Salt & pepper
- Soy sauce & vinegar
Procedure
Even though there are lots of ingredients, we will be simplifying the process here. Just heat the pan with pork's fat in it. Add oil if needed. Cook till brown(ish). Add garlic and onion. Still, add bell pepper. Add the pork, lean part. Seasoned with salt, black pepper and magic sarap. Add in soy sauce and for a kick, add vinegar. Still and cook for a minute. Now add "hipon" (or the fermented shrimp). Add a cup of water. On high heat, let it boil and add the beans. Cook for about 4 minutes. Now add squash and let it cook for another 5 minutes. No stirring necessary, just shake the pan. Add the eggplant and ampalaya. Add magic sarap seasoning and add another 3/4 cup water. This also mixes the seasoning with the rest of the ingredients. Cook for another 3 minutes. Stir, and cook for a minute. Lastly, add the okra and cook for 3 minutes.
