Pork Sinigang (Sour Soup)

This recipe is from the northern part of the Philippines. And it that region, this recipe is famous. However, this is a simplistic version due to the quarantine season. It should have a tomato to and tamarind (sampaloc) to add more sour savor.

Ingredients
  • 200 grams pork belly
  • Water
  • Tomato, onion and ginger
  • Salt and pepper to taste
  • 4 pcs string beans, cut into medium size
  • Half eggplant
  • 1 medium raddish
  • 1 pack sinigang mix
  • Okra
  • Chinese cabbage (pechay), a substitue to kangkong or camote (sweet potato) tops
Procedure

Video showing how to cook the said recipe posted below on my YouTube channel. So simply, cook the pork for about 15 to 20 minutes with salt, pepper and seasoning. Add in tomato, onion and ginger. Remove lard. When pork is cooked, add the beans. It should take 4-5 minutes to cook the beans. Next, add in eggplant and radish. This should also just take 4 minutes and add the sour seasoning, this time I just use the original Sinigang Mix from Knorr. Lastly, add in the cabbage and okra. For about 3 minutes, the food is ready to go.

A simple tea would nicely with this. Optional, of course :)
