Simple Homemade Paella Recipe

This is one of my technical recipe. The ingredients are not that hard to find but the technicality of cooking it matters. There are multiple ways it could go wrong. From burning the rice to watery version, or the wrong pale color. Paella needs to be colorful and tasty. It's not a Filipino dish, although we have a version of Aros, variety of Valenciana. This one is a bit from Valenciana but not with proper ingredients. This is without the  rabbit and with raisins and all, thus I call it Filipino style. Here it is, check the ingredients and procedure below. Enjoy!

Ingredients

  • Rice, half cup
  • Glutinous rice, 3 quarters
  • Chicken, about a 100 grams, cubed
  • Chicken cube, half
  • Tomato
  • Garlic
  • Raisin
  • Peas
  • Green beans
  • Bell pepper
  • Chorizo bilbao or Chinese sausage
  • Salt & seasoning
  • Oil
  • Turmeric powder, half tablespoon

Procedure

Pan heat the salt. Add oil. Add chicken and cook, golden brown is the aim. We want colors with this recipe. When chicken is cooked, add the beans. We also want colors for the beans but please note, not burnt. Just caramelize. Now add the bilbao and cook for a minute or so. Next is the garlic and drop in the tomato. I don't have red one so green will do, this would add sweetness and a hint of sourness. Tomato will prevent the garlic from burning. Now add the  turmeric powder. Mix well. Add water, chicken powder and stir. Let it boil. Should just be about a minute or so. Add the rice and glutinous rice. Stir. Add the peas and stir. This should be the last stir. Make sure to stir the bottom for the flavor to mix well with all the ingredients. This shouldn't take long, we wouldn't want the glutinous rice produce lots of starch. Cook for 5 minutes in high heat. Now top it with bell pepper and raisin. Cook for another 10 minutes in low heat. This will be the final stage.

Extra. High heat for 30 seconds to make the socarat at the bottom.
